Chocolate orange ganache flourless cake (vegan, gluten free)

I created this delicious chocolate orange ganache cake as we had some of our most special friends round for lunch at the weekend and I wanted to make something I knew they would love. Luckily they are fellow vegans so it’s always worth making the effort! I paired this cake with one of my new favourites my tofu ribs with mac and cheese and green beans and the menu was very well received!

Before going vegan I was never really in to desserts but the best thing about vegan baking is there are so many ways to sneak in healthy ingredients and still make the most amazingly sweet treats! My chocolate orange ganache cake is packed with healthy ground almonds, raw cacao and fresh orange, and even chickpeas! Which makes every bite taste that bit sweeter knowing there is at least a bit of nutrition hiding behind the gooey chocolate! I am getting much more in to baking now as I want Sunny to enjoy sweet treats and not feel she is missing out by being vegan. With all my practicing I now know if she is ever disappointed by not being able to have cake at a party or event I can take her home and whip up some vegan cookies or brownies and save the day!

CHOCOLATE ORANGE GANACHE FLOURLESS CAKE (VEGAN, GLUTEN FREE)

Prep time: 20 minutes

Cook time: 35 minutes

Total time: 1 hour

Ingredients

Cake

  • 100g vegan dark chocolate (I used 70% cocoa content)
  • 1/2 can chickpeas
  • 100ml plant milk
  • 3 tbsp. raw cacao (or sub cocoa powder)
  • 1 cup/120g ground almonds
  • 3 tbsp. coconut oil
  • 1 cup/220g coconut sugar (or sugar of choice)
  • zest and juice of 1 orange
  • pinch of salt

Ganache

  • 200g vegan dark chocolate (I used 70% cocoa content)
  • 160ml can of coconut cream
  • 2 tbsp. coconut oil
  • 2 tbsp. maple syrup

Directions

  1. Preheat the oven to 180’C
  2. To make the cake melt the chocolate and coconut oil gently before adding with the rest of the cake ingredients to a food processor. Process well for a good few minutes until smooth and really well combined
  3. Pour into a cake tin lined with baking paper and place in the oven for around 35 minutes (I used a 20cm tin so adjust time depending on size of tin)
  4. While the cake is cooking make the ganache by combining all the ganache ingredients into a small saucepan and stirring until the chocolate is melted and the ganache is smooth and glossy
  5. Wait until the cake is cooled before placing onto a plate and drizzling with ganache and dressing with chocolate shavings or more orange zest

 

This cake will keep well in the fridge for 3-4 days but is best if when you take out a slice you leave it at room temperature for 15 minutes for the ganache to soften.
